Sweet Chili Shrimp

Ingredients

For the Shrimp:

  • 1 lb (450 g) large shrimp, peeled and deveined (tails on optional)

  • ½ cup cornstarch

  • ¼ cup all-purpose flour

  • ½ tsp salt

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • 2 eggs, lightly beaten

  • Oil for frying (vegetable or canola)

For the Sweet Chili Sauce:

  • ½ cup Thai sweet chili sauce

  • 2 tbsp honey

  • 1 tbsp soy sauce

  • 1 tsp rice vinegar or lime juice

  • 1 garlic clove, minced

  • ½ tsp crushed red pepper flakes (optional, for extra heat)

For Garnish:

  • Chopped green onions

  • Toasted sesame seeds

  • Lime wedges


Instructions

1. Prepare the Shrimp

  1. Pat shrimp dry with paper towels.

  2. In a bowl, combine cornstarch, flour, salt, garlic powder, and pepper.

  3. Dip each shrimp into the beaten eggs, then coat in the dry mixture. Shake off excess.


2. Fry the Shrimp

  1. Heat about 1 inch of oil in a skillet to 350°F (175°C).

  2. Fry shrimp in batches for 2–3 minutes per side until golden and crispy.

  3. Remove and drain on a paper towel–lined plate.


3. Make the Sweet Chili Sauce

  1. In a small saucepan, combine sweet chili sauce, honey, soy sauce, vinegar, minced garlic, and red pepper flakes.

  2. Simmer over medium heat for 2–3 minutes, stirring until slightly thickened.


4. Toss and Serve

  1. Add the crispy shrimp to a large bowl and pour the warm sauce over the top.

  2. Toss gently to coat every piece evenly.

  3. Garnish with green onions, sesame seeds, and a squeeze of lime juice.
