Sweet Potato Black Bean Chili

Ingredients

1 tbsp olive oil
-
1 medium onion, diced
-
3 cloves garlic, minced
-
2 cups sweet potatoes, peeled & cubed

1 red bell pepper, diced
-
2 cans (15 oz each) black beans, drained & rinsed

1 can (15 oz) diced tomatoes
-
2 cups vegetable or chicken broth
-
2 tbsp tomato paste
-
1 tsp chili powder
-
1 tsp smoked paprika
-
1 tsp cumin
-
½ tsp oregano
-
¼ tsp cinnamon (optional — amazing depth with chili!)

½ tsp salt, more to taste

¼ tsp black pepper
-
1–2 tbsp maple syrup or honey (optional to balance flavor)

Juice of ½ lime
-
Fresh cilantro, chopped (for garnish)
Instructions
1. Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add onion and cook 3–4 minutes until softened.
Add garlic and cook 1 minute more.
2. Add Vegetables & Spices
Stir in sweet potatoes and red bell pepper.
Add chili powder, smoked paprika, cumin, oregano, cinnamon, salt, and pepper.
Stir to coat everything in the spices.
3. Add Beans & Liquids
Add:

Black beans
-
Diced tomatoes
-
Tomato paste
-
Broth
Mix well.
4. Simmer
Bring to a boil, then reduce heat and simmer 25–30 minutes until sweet potatoes are tender and chili thickens.
5. Finish
Stir in lime juice and maple syrup (if using).
Taste and adjust seasoning.
6. Serve
