Ingredients

For the Sweet Potato Fritters

  • 2 medium sweet potatoes, peeled and grated (about 1 pound)

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 2-3 large eggs, beaten

  • ¾ cup whole milk

  • 2 tablespoons melted butter

  • 2 green onions, thinly sliced (optional)

  • 1 teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • Neutral oil for frying

For the Honey Butter

  • ½ cup honey

  • 4 tablespoons unsalted butter

  • 2 tablespoons water

  • ¼ teaspoon kosher salt

  • Pinch of cayenne pepper (optional for heat)

Instructions

Prepare the Sweet Potatoes

Peel and grate sweet potatoes using a large box grater or food processor with shredding attachment. Place grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture to ensure crispy fritters. This step is crucial for achieving the proper texture.

Make the Fritter Batter

In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, pepper, smoked paprika, and garlic powder. In a separate bowl, beat eggs and combine with milk and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined – don’t overmix. Fold in the grated sweet potatoes and green onions if using.

Fry the Fritters

Heat ¼ inch of oil in a large skillet over medium heat until it shimmers. The oil is ready when a small drop of batter sizzles immediately. Using two spoons or a small scoop, form bite-sized portions of batter and carefully drop into hot oil. Don’t overcrowd the pan – work in batches.

Fry fritters for 2-3 minutes per side until golden brown and crispy. Use a fork to flip each fritter and ensure even browning. Transfer to a paper towel-lined plate and immediately season with salt.

Make the Honey Butter

While fritters are frying, combine honey, water, and salt in a small saucepan. Bring to a simmer over medium heat and cook for 30 seconds. Reduce heat to low and whisk in butter one tablespoon at a time until smooth and silky. Alternatively, microwave butter and honey in 15-second intervals, whisking between each interval until smooth.
