Sweet Potato Lentil Stew

Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 cups sweet potato, diced

  • 1 cup dried red lentils, rinsed

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • ½ tsp turmeric

  • ½ tsp dried thyme

  • Salt and black pepper, to taste

  • 4 cups vegetable broth

  • 1 cup coconut milk (or heavy cream for a richer stew)

  • 2 cups spinach or kale, chopped

  • Optional: squeeze of lemon, fresh parsley

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion, garlic, and carrots; sauté 4–5 minutes.

  2. Stir in sweet potatoes, lentils, cumin, paprika, turmeric, thyme, salt, and black pepper.

  3. Pour in vegetable broth. Bring to a boil, then reduce heat and simmer 20–25 minutes, until lentils and sweet potatoes are tender.

  4. Stir in coconut milk and simmer 5 more minutes.

  5. Add spinach or kale and cook until wilted.

  6. Taste and adjust seasoning. Add a splash of lemon if desired.

  7. Serve warm with crusty bread.
