Sweet Potato Lentil Stew
Ingredients

1 tbsp olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 cups sweet potato, diced

1 cup dried red lentils, rinsed

1 tsp cumin
-
1 tsp smoked paprika
-
½ tsp turmeric
-
½ tsp dried thyme

Salt and black pepper, to taste

4 cups vegetable broth
-
1 cup coconut milk (or heavy cream for a richer stew)

2 cups spinach or kale, chopped

Optional: squeeze of lemon, fresh parsley
Instructions

Heat olive oil in a pot over medium heat. Add onion, garlic, and carrots; sauté 4–5 minutes.

Stir in sweet potatoes, lentils, cumin, paprika, turmeric, thyme, salt, and black pepper.

Pour in vegetable broth. Bring to a boil, then reduce heat and simmer 20–25 minutes, until lentils and sweet potatoes are tender.

Stir in coconut milk and simmer 5 more minutes.

Add spinach or kale and cook until wilted.

Taste and adjust seasoning. Add a splash of lemon if desired.

Serve warm with crusty bread.
