Thanksgiving Turkey Leg Poppers
Ingredients:

2 lbs turkey drumsticks (skin removed, meat shredded)

½ cup breadcrumbs (Panko works best for crunch)

¼ cup grated Parmesan cheese

2 cloves garlic, minced
-
1 tsp fresh thyme, chopped (or ½ tsp dried)

½ tsp smoked paprika

Salt & pepper, to taste

2 eggs, beaten
-
2 tbsp olive oil or melted butter (for brushing)

Cranberry dipping sauce or gravy, for serving
Instructions:

Prepare the Meat:

Cook turkey drumsticks by roasting, boiling, or using leftover cooked turkey. Let cool slightly and shred the meat, discarding bones and skin.

Mix the Filling:

In a large bowl, combine shredded turkey, breadcrumbs, Parmesan, garlic, thyme, paprika, salt, and pepper.

Add beaten eggs and mix until the mixture sticks together.

Form the Poppers:

Roll turkey mixture into small, bite-sized balls (1–1.5 inches). Place on a parchment-lined baking sheet.

Brush lightly with olive oil or melted butter for crisping.

Bake:

Preheat oven to 400°F (200°C).

Bake for 15–20 minutes until golden and crispy on the outside.

Serve warm with cranberry sauce, gravy, or a honey-mustard dipping sauce.
