Tuna Melt Patties
Ingredients

2 (5 oz) cans tuna in water, well-drained

2 large eggs, lightly beaten

1 cup shredded cheese (cheddar or mozzarella)

4 oz cream cheese, softened

¼ cup red onion, finely chopped

¼ cup panko breadcrumbs

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 teaspoons minced garlic

2 tablespoons fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper

2-3 tablespoons olive oil for cooking
Instructions

Drain tuna thoroughly and flake with a fork, breaking up any large chunks

In a large bowl, whisk together eggs, then add chopped onion, well-drained tuna, shredded cheese, and softened cream cheese

Mix in mayonnaise, Dijon mustard, minced garlic, parsley, panko breadcrumbs, salt, and pepper until well combined

Using your hands or a ¼ cup measuring scoop, shape mixture into 8-9 patties and place on a plate

Refrigerate patties for 15 minutes to firm up

Heat olive oil in a large nonstick skillet over medium heat

Cook patties for 3-4 minutes per side until golden brown and crispy

Flip carefully when bottom forms a golden crust
