Tuna Melt Patties

Ingredients

  • 2 (5 oz) cans tuna in water, well-drained

  • 2 large eggs, lightly beaten

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 4 oz cream cheese, softened

  • ¼ cup red onion, finely chopped

  • ¼ cup panko breadcrumbs

  • 2 tablespoons mayonnaise

  • 1 tablespoon Dijon mustard

  • 2 teaspoons minced garlic

  • 2 tablespoons fresh parsley, chopped

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2-3 tablespoons olive oil for cooking

Instructions

  1. Drain tuna thoroughly and flake with a fork, breaking up any large chunks

  2. In a large bowl, whisk together eggs, then add chopped onion, well-drained tuna, shredded cheese, and softened cream cheese

  3. Mix in mayonnaise, Dijon mustard, minced garlic, parsley, panko breadcrumbs, salt, and pepper until well combined

  4. Using your hands or a ¼ cup measuring scoop, shape mixture into 8-9 patties and place on a plate

  5. Refrigerate patties for 15 minutes to firm up

  6. Heat olive oil in a large nonstick skillet over medium heat

  7. Cook patties for 3-4 minutes per side until golden brown and crispy

  8. Flip carefully when bottom forms a golden crust

Serve immediately while hot. These cheesy tuna patties capture all the flavors of a classic tuna melt in a convenient patty form. They make 8-9 patties and serve 4-6 people
