Winter White Chicken Chili

Ingredients

  • 1 ½ lbs chicken breast, cooked & shredded

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 cans (15 oz each) white beans, drained

  • 1 can (15 oz) corn, drained

  • 1 can (4 oz) diced green chiles

  • 4 cups chicken broth

  • 1 cup sour cream

  • 1 cup heavy cream

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp oregano

  • ½ tsp paprika

  • Salt & pepper to taste

  • 1 cup shredded Monterey Jack cheese

  • Juice of 1 lime

  • Fresh cilantro for garnish


Instructions

  1. Sauté aromatics:
    Heat olive oil in a large pot. Add onions and cook until soft. Stir in garlic.

  2. Build the chili base:
    Add white beans, corn, green chiles, chicken broth, and all seasonings. Stir well.

  3. Add chicken:
    Mix in the shredded chicken. Bring to a simmer.

  4. Make it creamy:
    Stir in sour cream, heavy cream, and Monterey Jack cheese. Let the chili simmer until thick and creamy (about 10 minutes).

  5. Finish:
    Add lime juice and adjust seasoning.

  6. Serve:
    Top with cilantro, extra cheese, or crushed tortilla chips.
