Ingredients

1 ½ lbs chicken breast, cooked & shredded

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans, drained

1 can (15 oz) corn, drained

1 can (4 oz) diced green chiles
-
4 cups chicken broth
-
1 cup sour cream
-
1 cup heavy cream
-
1 tsp cumin
-
1 tsp chili powder
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp oregano
-
½ tsp paprika
-
Salt & pepper to taste

1 cup shredded Monterey Jack cheese

Juice of 1 lime

Fresh cilantro for garnish
Instructions

Sauté aromatics:
Heat olive oil in a large pot. Add onions and cook until soft. Stir in garlic. -
Build the chili base:
Add white beans, corn, green chiles, chicken broth, and all seasonings. Stir well. -
Add chicken:
Mix in the shredded chicken. Bring to a simmer. -
Make it creamy:
Stir in sour cream, heavy cream, and Monterey Jack cheese. Let the chili simmer until thick and creamy (about 10 minutes). -
Finish:
Add lime juice and adjust seasoning. -
Serve:
Top with cilantro, extra cheese, or crushed tortilla chips.
