Zesty Cajun Shrimp and Sausage Skillet
Ingredients:

1 lb large shrimp, peeled & deveined

12 oz smoked sausage (andouille or kielbasa), sliced into rounds

2 tbsp olive oil (divided)

1 red bell pepper, sliced
-
1 yellow bell pepper, sliced
-
1 small red onion, sliced
-
2 cloves garlic, minced
-
1 cup corn kernels (fresh, frozen, or canned)
-
2 tsp Cajun seasoning (or more to taste)

½ tsp paprika (optional, for extra smokiness)

½ tsp crushed red pepper flakes (optional, for heat)

Salt & black pepper to taste

1 tbsp lemon juice
-
Fresh parsley, chopped (for garnish)
Instructions:

Season shrimp: In a bowl, toss shrimp with 1 tbsp olive oil, Cajun seasoning, paprika, and a pinch of salt & pepper. Set aside.

Cook sausage: Heat a large skillet over medium-high heat. Add sausage slices and cook until browned, about 3–4 minutes. Remove and set aside.

Sauté veggies: In the same skillet, add remaining olive oil. Sauté peppers, onion, corn, and garlic until tender, about 4–5 minutes.

Cook shrimp: Push veggies to the side and add shrimp. Cook until pink and opaque, about 2 minutes per side.

Combine: Return sausage to skillet, toss everything together, and drizzle with lemon juice. Taste and adjust seasoning.

Serve: Garnish with parsley and serve hot — over rice, pasta, or with crusty bread.
