Zesty Lime Shrimp and Avocado Salad
Ingredients
For the Salad:

1 pound jumbo cooked shrimp, peeled and chopped

2 medium avocados, diced

1 medium tomato, diced (or 1/2 cup cherry tomatoes, halved)

1/4 cup red onion, finely chopped

1 jalapeño, seeds removed and diced fine

1 tablespoon fresh cilantro, chopped
For the Dressing:

2 limes, juiced (about 1/4 cup)

1 teaspoon extra virgin olive oil

1/4 teaspoon kosher salt

Black pepper to taste
Instructions

Prepare the dressing: In a small bowl, combine red onion, lime juice, olive oil, salt, and pepper. Let marinate for at least 5 minutes to mellow the onion flavor.

Prepare the shrimp: Pat cooked shrimp dry with paper towels to remove excess moisture. Chop into bite-sized pieces (about thirds).

Combine ingredients: In a large bowl, combine chopped shrimp, diced avocado, tomatoes, and jalapeño.

Mix together: Add the marinated onion mixture and fresh cilantro to the bowl. Gently toss all ingredients together until well coated.

Season and chill: Taste and adjust salt and pepper as needed. For best results, refrigerate for 15-30 minutes before serving to allow flavors to meld.
