Zesty Lime Shrimp and Avocado Salad

Ingredients

For the Salad:

  • 1 pound jumbo cooked shrimp, peeled and chopped

  • 2 medium avocados, diced

  • 1 medium tomato, diced (or 1/2 cup cherry tomatoes, halved)

  • 1/4 cup red onion, finely chopped

  • 1 jalapeño, seeds removed and diced fine

  • 1 tablespoon fresh cilantro, chopped

For the Dressing:

  • 2 limes, juiced (about 1/4 cup)

  • 1 teaspoon extra virgin olive oil

  • 1/4 teaspoon kosher salt

  • Black pepper to taste

Instructions

  1. Prepare the dressing: In a small bowl, combine red onion, lime juice, olive oil, salt, and pepper. Let marinate for at least 5 minutes to mellow the onion flavor.

  2. Prepare the shrimp: Pat cooked shrimp dry with paper towels to remove excess moisture. Chop into bite-sized pieces (about thirds).

  3. Combine ingredients: In a large bowl, combine chopped shrimp, diced avocado, tomatoes, and jalapeño.

  4. Mix together: Add the marinated onion mixture and fresh cilantro to the bowl. Gently toss all ingredients together until well coated.

  5. Season and chill: Taste and adjust salt and pepper as needed. For best results, refrigerate for 15-30 minutes before serving to allow flavors to meld.

  6. Serve: Serve chilled as an appetizer with tortilla chips or over greens as a light meal.
