Cajun Cream Sauce

Ingredients
• 2 tbsp butter
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1 tbsp Cajun seasoning (plus a little extra to taste)
• 1 cup heavy cream
• 1 cup chicken broth
• 1⁄2 cup freshly grated Parmesan
• Salt and black pepper to taste
• Optional: pinch of smoked paprika or cayenne for more heat
• Optional: chopped parsley or green onions for garnish

Instructions

  1. Warm up a skillet over medium heat. Add butter and olive oil until melted and shimmering in a very show-off way.

  2. Stir in garlic and Cajun seasoning. Let them bloom for about 30 seconds so the flavor goes full fireworks.

  3. Pour in chicken broth and simmer a couple minutes. That reduces the sauce and locks in savory goodness.

  4. Stir in the heavy cream and Parmesan. Let it gently bubble until creamy and slightly thick. You want it to coat a spoon like it’s bragging.

  5. Taste and adjust with salt, pepper, and extra Cajun seasoning if you’re living spicy today.

  6. Remove from heat and finish with parsley or green onions for a little freshness.
