Cheesy Buffalo Chicken Rice Casserole

Ingredients

  • 3 cups cooked rice (white or brown)

  • 2 cups cooked shredded chicken (rotisserie works great)

  • 1 cup buffalo wing sauce (adjust to heat preference)

  • 1 (10.5 oz) can cream of chicken soup

  • 1/2 cup ranch dressing

  • 1/2 cup sour cream

  • 1 1/2 cups shredded cheddar cheese (divided)

  • 1/2 cup shredded mozzarella cheese

  • 4 slices cooked bacon, crumbled

  • 2 green onions, chopped (for garnish)

  • Salt and black pepper, to taste


Instructions

  1. Preheat oven:
    Set to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Make the sauce:
    In a large bowl, mix together buffalo sauce, cream of chicken soup, ranch dressing, sour cream, salt, and pepper.

  3. Assemble the casserole:
    Stir in cooked rice, shredded chicken, 1 cup cheddar cheese, and mozzarella cheese. Mix until fully coated in the creamy sauce.

  4. Bake:
    Spread the mixture evenly into the prepared dish. Top with remaining cheddar cheese and crumbled bacon.
    Bake uncovered for 20–25 minutes, until hot and bubbly.

  5. Garnish and serve:
    Sprinkle with chopped green onions and drizzle with extra ranch or buffalo sauce if desired. Serve warm and enjoy!
