Cheesy Chicken Parmesan Meatballs

Ingredients:

  • 1 lb (450g) ground chicken

  • ½ cup breadcrumbs

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 large egg

  • 2 tablespoons milk

  • Salt and black pepper, to taste

  • 1½ cups marinara sauce

  • 1 cup shredded mozzarella cheese

  • 2 tablespoons grated Parmesan cheese (for topping)

  • 1 tablespoon olive oil

  • Fresh basil or parsley, chopped (for garnish)


Instructions:

  1. Preheat Oven:
    Preheat oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet.

  2. Make the Meatballs:
    In a large bowl, combine ground chicken, breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, egg, milk, salt, and pepper. Mix until just combined — don’t overmix.

  3. Form and Cook:
    Roll mixture into 1½-inch meatballs (about 16–18). Heat olive oil in a large skillet over medium-high heat and sear meatballs for 2–3 minutes per side until lightly browned.

  4. Add Sauce and Bake:
    Pour marinara sauce over the meatballs, sprinkle mozzarella and Parmesan on top, then bake uncovered for 15–18 minutes, or until meatballs are cooked through and cheese is bubbly.

  5. Garnish and Serve:
    Top with chopped basil or parsley and serve warm.
