Cheesy Chicken Parmesan Meatballs

Ingredients:

1 lb (450g) ground chicken

½ cup breadcrumbs

¼ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder
-
1 large egg
-
2 tablespoons milk
-
Salt and black pepper, to taste

1½ cups marinara sauce
-
1 cup shredded mozzarella cheese
-
2 tablespoons grated Parmesan cheese (for topping)

1 tablespoon olive oil

Fresh basil or parsley, chopped (for garnish)
Instructions:

Preheat Oven:
Preheat oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet. -
Make the Meatballs:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, egg, milk, salt, and pepper. Mix until just combined — don’t overmix. -
Form and Cook:
Roll mixture into 1½-inch meatballs (about 16–18). Heat olive oil in a large skillet over medium-high heat and sear meatballs for 2–3 minutes per side until lightly browned. -
Add Sauce and Bake:
Pour marinara sauce over the meatballs, sprinkle mozzarella and Parmesan on top, then bake uncovered for 15–18 minutes, or until meatballs are cooked through and cheese is bubbly. -
Garnish and Serve:
Top with chopped basil or parsley and serve warm.
