Classic Meatloaf with Brown Sugar Glaze

Ingredients:

For the Meatloaf:

  • 1 ½ lbs ground beef (80/20 works best for moisture)

  • 1 cup breadcrumbs (plain or Italian seasoned)

  • ½ cup milk

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 2 large eggs, beaten

  • 2 tablespoons ketchup

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried thyme (optional)

For the Brown Sugar Glaze:

  • ⅓ cup ketchup

  • 2 tablespoons brown sugar

  • 1 tablespoon apple cider vinegar


Instructions:

  1. Preheat the oven:
    Set oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.

  2. Prepare the meatloaf mixture:
    In a large bowl, combine breadcrumbs and milk. Let sit for 2 minutes so the crumbs soak up the milk.
    Add ground beef, chopped onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and thyme.
    Mix gently with your hands until everything is just combined — don’t overmix or it’ll get tough.

  3. Shape and place in pan:
    Transfer the mixture to the loaf pan and shape it evenly. Smooth the top with a spoon.

  4. Make the glaze:
    In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze evenly over the top of the meatloaf.

  5. Bake:
    Bake for 45 minutes, then spread the remaining glaze over the top. Continue baking for another 15–20 minutes, until the center reaches 160°F (70°C).

  6. Rest and serve:
    Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley if desired.
