Coconut Lime Fish with Avocado Salsa
Ingredients
Fish:
• 1 lb white fish fillets (cod, tilapia, or mahi-mahi)
• 1/2 cup coconut milk
• Juice and zest of 1 lime
• 1 tsp garlic powder
• 1/2 tsp paprika
• Salt + black pepper
• 1 tbsp olive oil
Avocado Salsa:
• 1 large avocado, diced
• 1/2 cup cherry tomatoes, quartered
• 1/4 cup red onion, finely diced
• 1 tbsp fresh cilantro, chopped
• Juice of 1 lime
• Salt + black pepper
Instructions

In a small bowl, mix coconut milk, lime juice and zest, garlic powder, paprika, salt, and pepper. Marinate fish for 15–20 minutes.

Heat olive oil in a skillet over medium-high heat. Cook fish 3–4 minutes per side, until opaque and flaky.

While the fish cooks, combine avocado, tomatoes, red onion, cilantro, lime juice, salt, and pepper in a small bowl. Toss gently.

Plate fish and top with avocado salsa. Serve with rice, quinoa, or a light salad.
