Corned Beef Hash
Ingredients (4 servings)

2 tbsp butter (or oil)

1 medium onion, finely chopped

3 cups cooked corned beef, diced (leftovers work perfectly)

3 cups cooked potatoes, diced (boiled, roasted, or leftover)

1 clove garlic, minced (optional)

Salt and black pepper, to taste

1 tbsp fresh parsley, chopped (optional)

Fried eggs, for serving (optional but highly recommended)
Instructions

Cook onion:
In a large skillet, melt butter over medium heat. Add onion and cook 4–5 minutes until softened. Add garlic if using, cook 1 minute more. -
Add potatoes & corned beef:
Stir in diced potatoes and corned beef. Spread mixture evenly in the skillet. -
Crisp it up:
Press down lightly with a spatula. Cook undisturbed for 4–5 minutes until bottom is crispy and golden. Stir, then press down again. Repeat until desired crispiness. -
Season & finish:
Taste and season with salt and black pepper. Sprinkle parsley on top if desired. -
Serve:
Top with fried or poached eggs and serve hot.
