Description

Corned Beef Hash

Ingredients (4 servings)

  • 2 tbsp butter (or oil)

  • 1 medium onion, finely chopped

  • 3 cups cooked corned beef, diced (leftovers work perfectly)

  • 3 cups cooked potatoes, diced (boiled, roasted, or leftover)

  • 1 clove garlic, minced (optional)

  • Salt and black pepper, to taste

  • 1 tbsp fresh parsley, chopped (optional)

  • Fried eggs, for serving (optional but highly recommended)

Instructions

  1. Cook onion:
In a large skillet, melt butter over medium heat. Add onion and cook 4–5 minutes until softened. Add garlic if using, cook 1 minute more.

  2. Add potatoes & corned beef:
Stir in diced potatoes and corned beef. Spread mixture evenly in the skillet.

  3. Crisp it up:
Press down lightly with a spatula. Cook undisturbed for 4–5 minutes until bottom is crispy and golden. Stir, then press down again. Repeat until desired crispiness.

  4. Season & finish:
Taste and season with salt and black pepper. Sprinkle parsley on top if desired.

  5. Serve:
Top with fried or poached eggs and serve hot.
