Creamy Tuscan Salmon

Ingredients

  • 4 salmon fillets (6 oz each)

  • Salt and black pepper, to taste

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken or vegetable broth

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ½ cup sun-dried tomatoes, chopped

  • 2 cups fresh spinach

  • 2 tbsp chopped fresh parsley, for garnish


Instructions

  1. Cook the Salmon:
    Season salmon with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
    Sear salmon fillets for 3–4 minutes per side until golden and cooked through. Remove and set aside.

  2. Make the Creamy Tuscan Sauce:
    In the same skillet, sauté garlic for 30 seconds until fragrant.
    Stir in heavy cream, broth, Parmesan, and Italian seasoning. Simmer 2–3 minutes until slightly thickened.

  3. Add Veggies:
    Stir in sun-dried tomatoes and spinach. Cook until spinach wilts and the sauce is creamy.

  4. Combine with Salmon:
    Return salmon to the skillet, spooning sauce over the fillets. Simmer 1–2 minutes to heat through.

  5. Serve:
    Garnish with chopped parsley and extra Parmesan if desired. Serve with pasta, rice, or crusty bread.
