Creamy Tuscan Salmon
Ingredients

4 salmon fillets (6 oz each)

Salt and black pepper, to taste

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream
-
½ cup chicken or vegetable broth
-
½ cup grated Parmesan cheese
-
1 tsp Italian seasoning
-
½ cup sun-dried tomatoes, chopped
-
2 cups fresh spinach
-
2 tbsp chopped fresh parsley, for garnish
Instructions

Cook the Salmon:
Season salmon with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Sear salmon fillets for 3–4 minutes per side until golden and cooked through. Remove and set aside. -
Make the Creamy Tuscan Sauce:
In the same skillet, sauté garlic for 30 seconds until fragrant.
Stir in heavy cream, broth, Parmesan, and Italian seasoning. Simmer 2–3 minutes until slightly thickened. -
Add Veggies:
Stir in sun-dried tomatoes and spinach. Cook until spinach wilts and the sauce is creamy. -
Combine with Salmon:
Return salmon to the skillet, spooning sauce over the fillets. Simmer 1–2 minutes to heat through. -
Serve:
Garnish with chopped parsley and extra Parmesan if desired. Serve with pasta, rice, or crusty bread.
