Dijon Baked Salmon
Ingredients

4 salmon fillets (about 6 oz each)

2 tbsp Dijon mustard

1 tbsp whole-grain mustard (optional for texture)

2 tbsp olive oil (or melted butter)

2 tbsp honey (or maple syrup)

2 garlic cloves, minced

Juice of 1/2 lemon
-
1 tsp fresh thyme or dill (optional)

Salt & black pepper, to taste

Lemon slices, for garnish
Instructions

Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.

Make the Dijon glaze: In a small bowl, whisk together Dijon mustard, whole-grain mustard (if using), olive oil, honey, garlic, lemon juice, herbs, salt, and pepper.

Prepare salmon: Pat salmon fillets dry with a paper towel. Place skin-side down on the baking sheet.

Coat & bake: Spread the Dijon glaze generously over each fillet. Bake for 12–15 minutes, or until salmon flakes easily with a fork (internal temp 145°F / 63°C).

Serve: Garnish with lemon slices and fresh herbs. Pairs beautifully with roasted veggies, rice, or a fresh salad.
