Ingredients

1 whole beef tenderloin (3–4 lbs), trimmed

2 tbsp olive oil

6 tbsp softened butter
-
6 cloves garlic, minced
-
2 tsp kosher salt
-
1 tsp black pepper
-
1 tsp smoked paprika
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
½ tsp onion powder
-
½ tsp crushed red pepper (optional)

Fresh rosemary sprigs (for roasting)

Fresh thyme sprigs (for roasting)
Instructions
1. Prepare the Beef

Preheat oven to 475°F (245°C).

Pat beef tenderloin dry.

Tie with kitchen twine every 1–2 inches to ensure even cooking (optional but recommended).

Rub with olive oil, salt, pepper, smoked paprika, onion powder, thyme, and rosemary.
2. Make the Garlic Butter
In a small bowl, combine:

minced garlic
-
a pinch of salt & pepper
Set aside.
3. Sear the Tenderloin

Heat a large oven-safe skillet over high heat.

Add a little oil and sear the beef on all sides until deep golden brown (about 2–3 minutes per side).
4. Roast

Remove from heat.

Spread the garlic butter all over the tenderloin.

Add fresh rosemary and thyme sprigs to the skillet.

Transfer to the oven and roast:

125°F (52°C) — Rare (~25–30 min)

135°F (57°C) — Medium rare (~30–35 min)

145°F (63°C) — Medium (~35–40 min)
Use a meat thermometer for perfect results.
5. Rest & Slice

Remove from the oven and let rest 15 minutes before slicing.

Spoon any melted garlic butter from the pan over the slices.
