Garlic Butter Steak and Potato Skillet

Ingredients:

1½ lbs (680g) sirloin or ribeye steak, cut into 1-inch cubes

1½ lbs (680g) baby potatoes, halved

3 tablespoons olive oil, divided

4 tablespoons butter
-
4 cloves garlic, minced
-
1 teaspoon dried thyme
-
1 teaspoon dried rosemary

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions:

Cook the Potatoes:
In a large skillet over medium heat, add 2 tablespoons olive oil. Add halved potatoes, cut side down, and cook for 10–12 minutes until golden and tender. Season with salt and pepper. Remove and set aside. -
Cook the Steak Bites:
In the same skillet, add remaining olive oil. Season steak cubes generously with salt and pepper, then sear for 2–3 minutes per side until browned and cooked to your liking. Remove and set aside. -
Make the Garlic Butter Sauce:
Reduce heat to low. Add butter to the skillet along with minced garlic, thyme, and rosemary. Sauté for 30 seconds until fragrant. -
Combine:
Return steak and potatoes to the pan. Toss everything in the garlic butter sauce until coated and heated through. -
Serve:
Garnish with chopped fresh parsley and serve hot right from the skillet.
