🌭 Italian Sausage Peppers and Onions
Ingredients (Serves 4–6)

6 Italian sausages (mild or hot, your choice)

2 tbsp olive oil

2 red bell peppers, sliced
-
1 green bell pepper, sliced
-
1 yellow bell pepper, sliced
-
2 medium onions, sliced
-
3 garlic cloves, minced
-
1 can (14 oz) crushed tomatoes (or tomato sauce)
-
½ cup chicken broth (or white wine)
-
1 tsp dried oregano
-
1 tsp dried basil
-
½ tsp red pepper flakes (optional, for heat)

Salt & black pepper, to taste

Fresh parsley, chopped (for garnish)

Crusty rolls or pasta, for serving
Instructions

Brown the sausages:

Heat olive oil in a large skillet over medium heat.

Add sausages and cook until browned on all sides (they don’t need to be fully cooked through). Remove and set aside.

Cook the peppers and onions:

In the same skillet, add sliced peppers and onions. Cook for 6–7 minutes until softened and slightly caramelized.

Stir in garlic and cook 1 more minute.

Build the sauce:

Add crushed tomatoes, chicken broth (or wine), oregano, basil, red pepper flakes, salt, and black pepper. Stir well.

Simmer with sausages:

Return sausages to the skillet, nestling them into the sauce.

Cover and simmer on low heat for 20–25 minutes, until sausages are fully cooked and flavors meld together.

Serve:

Garnish with fresh parsley.

Serve on toasted crusty rolls, with pasta, or alongside roasted potatoes.
