🌭 Italian Sausage Peppers and Onions

Ingredients (Serves 4–6)

  • 6 Italian sausages (mild or hot, your choice)

  • 2 tbsp olive oil

  • 2 red bell peppers, sliced

  • 1 green bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 medium onions, sliced

  • 3 garlic cloves, minced

  • 1 can (14 oz) crushed tomatoes (or tomato sauce)

  • ½ cup chicken broth (or white wine)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Crusty rolls or pasta, for serving


Instructions

  1. Brown the sausages:

    • Heat olive oil in a large skillet over medium heat.

    • Add sausages and cook until browned on all sides (they don’t need to be fully cooked through). Remove and set aside.

  2. Cook the peppers and onions:

    • In the same skillet, add sliced peppers and onions. Cook for 6–7 minutes until softened and slightly caramelized.

    • Stir in garlic and cook 1 more minute.

  3. Build the sauce:

    • Add crushed tomatoes, chicken broth (or wine), oregano, basil, red pepper flakes, salt, and black pepper. Stir well.

  4. Simmer with sausages:

    • Return sausages to the skillet, nestling them into the sauce.

    • Cover and simmer on low heat for 20–25 minutes, until sausages are fully cooked and flavors meld together.

  5. Serve:

    • Garnish with fresh parsley.

    • Serve on toasted crusty rolls, with pasta, or alongside roasted potatoes.
