Lamb Chops with Peanut Sauce
Ingredients:
For the Lamb Chops:

8 lamb chops (about 1 inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper
-
1 teaspoon smoked paprika
For the Peanut Sauce:

½ cup creamy peanut butter
-
¼ cup coconut milk
-
2 tablespoons soy sauce
-
1 tablespoon lime juice
-
1 tablespoon honey or brown sugar
-
1 teaspoon ginger, grated
-
1 clove garlic, minced
-
½ teaspoon chili flakes (optional)

Water as needed to thin the sauce
For Garnish (optional):

Chopped peanuts
-
Fresh cilantro
Instructions:

Prepare the lamb:
Season lamb chops with olive oil, garlic, salt, pepper, and smoked paprika. Let sit for 15–30 minutes at room temperature. -
Cook the lamb:
Heat a skillet or grill pan over medium-high heat.
Sear lamb chops 3–4 minutes per side for medium-rare (adjust time based on thickness). Remove and rest 5 minutes. -
Make the peanut sauce:
In a small saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, honey, garlic, ginger, and chili flakes.
Heat gently, whisking, until smooth and slightly thickened. Add water a little at a time if needed to reach a pourable consistency. -
Serve:
Drizzle peanut sauce over lamb chops.
Garnish with chopped peanuts and fresh cilantro if desired.
