Lamb Chops with Peanut Sauce

Ingredients:

For the Lamb Chops:

  • 8 lamb chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

For the Peanut Sauce:

  • ½ cup creamy peanut butter

  • ¼ cup coconut milk

  • 2 tablespoons soy sauce

  • 1 tablespoon lime juice

  • 1 tablespoon honey or brown sugar

  • 1 teaspoon ginger, grated

  • 1 clove garlic, minced

  • ½ teaspoon chili flakes (optional)

  • Water as needed to thin the sauce

For Garnish (optional):

  • Chopped peanuts

  • Fresh cilantro


Instructions:

  1. Prepare the lamb:
    Season lamb chops with olive oil, garlic, salt, pepper, and smoked paprika. Let sit for 15–30 minutes at room temperature.

  2. Cook the lamb:
    Heat a skillet or grill pan over medium-high heat.
    Sear lamb chops 3–4 minutes per side for medium-rare (adjust time based on thickness). Remove and rest 5 minutes.

  3. Make the peanut sauce:
    In a small saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, honey, garlic, ginger, and chili flakes.
    Heat gently, whisking, until smooth and slightly thickened. Add water a little at a time if needed to reach a pourable consistency.

  4. Serve:
    Drizzle peanut sauce over lamb chops.
    Garnish with chopped peanuts and fresh cilantro if desired.
