🍝 Ravioli with Tomatoes, Asparagus, Garlic & Herbs

Ingredients:

  • 1 (20 oz) package cheese ravioli (fresh or frozen)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

  • 1 pint cherry tomatoes, halved

  • ½ cup vegetable or chicken broth

  • ¼ tsp red pepper flakes (optional)

  • 2 tbsp fresh basil, chopped

  • 2 tbsp fresh parsley, chopped

  • ¼ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Extra drizzle of olive oil or balsamic glaze (optional, for serving)


Instructions:

  1. Cook the ravioli:

    • Bring a large pot of salted water to a boil.

    • Cook ravioli according to package instructions. Drain and set aside.

  2. Sauté the vegetables:

    • In a large skillet, heat olive oil over medium heat.

    • Add garlic and cook until fragrant (about 1 minute).

    • Add asparagus and cook 3–4 minutes until tender-crisp.

    • Stir in cherry tomatoes and cook until softened, about 2 minutes.

  3. Make the sauce:

    • Pour in broth and a pinch of red pepper flakes.

    • Simmer 2–3 minutes until slightly reduced. Season with salt and pepper.

  4. Combine:

    • Add cooked ravioli to the skillet and gently toss with vegetables and sauce.

  5. Finish & serve:

    • Sprinkle with fresh basil, parsley, and Parmesan.

    • Drizzle with olive oil or balsamic glaze if desired.

    • Serve warm with crusty bread.
