Slow Cooker Brown Sugar Balsamic Glazed Beef Roast

Ingredients:

  • 3–4 lb beef chuck roast

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 cup beef broth

  • ½ cup balsamic vinegar

  • ¼ cup brown sugar

  • 2 tbsp Dijon mustard

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 large onion, sliced

  • Optional garnish: fresh parsley


Instructions:

  1. Prep the Roast:

    • Season the beef roast generously with salt and pepper.

    • Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned (about 3–4 minutes per side).

  2. Make the Glaze:

    • In a small bowl, whisk together balsamic vinegar, brown sugar, Dijon mustard, garlic, thyme, and rosemary.

  3. Slow Cook:

    • Place sliced onions in the bottom of the slow cooker.

    • Place the seared roast on top and pour the balsamic glaze over it.

    • Add beef broth around the sides (not directly over the roast).

    • Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and easily shredded.

  4. Serve:

    • Remove roast from slow cooker and let rest for 5 minutes.

    • Spoon glaze and onions over the top.

    • Slice or shred the beef and serve with mashed potatoes, rice, or roasted vegetables.

    • Garnish with fresh parsley for a pop of color.
