Slow Cooker Brown Sugar Balsamic Glazed Beef Roast
Ingredients:

3–4 lb beef chuck roast

Salt and pepper, to taste

2 tbsp olive oil
-
4 cloves garlic, minced
-
1 cup beef broth
-
½ cup balsamic vinegar
-
¼ cup brown sugar
-
2 tbsp Dijon mustard
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
1 large onion, sliced
-
Optional garnish: fresh parsley
Instructions:

Prep the Roast:

Season the beef roast generously with salt and pepper.

Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned (about 3–4 minutes per side).

Make the Glaze:

In a small bowl, whisk together balsamic vinegar, brown sugar, Dijon mustard, garlic, thyme, and rosemary.

Slow Cook:

Place sliced onions in the bottom of the slow cooker.
-
Place the seared roast on top and pour the balsamic glaze over it.

Add beef broth around the sides (not directly over the roast).

Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and easily shredded.

Serve:

Remove roast from slow cooker and let rest for 5 minutes.

Spoon glaze and onions over the top.

Slice or shred the beef and serve with mashed potatoes, rice, or roasted vegetables.

Garnish with fresh parsley for a pop of color.
