Slow Cooker Maple Balsamic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1/2 cup pure maple syrup

  • 1/3 cup balsamic vinegar

  • 2 tablespoons Dijon mustard

  • 3 cloves garlic, minced

  • 1 tablespoon soy sauce

  • 1 tablespoon olive oil

  • 1 teaspoon dried rosemary (or thyme)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 small onion, thinly sliced

Optional for garnish:
Fresh parsley, rosemary sprigs, or a drizzle of glaze


Instructions:

  1. Prepare the sauce:
    In a small bowl, whisk together maple syrup, balsamic vinegar, Dijon mustard, garlic, soy sauce, olive oil, rosemary, salt, and pepper until well combined.

  2. Layer the slow cooker:
    Place sliced onions at the bottom of your slow cooker. Lay the chicken breasts on top.

  3. Pour the sauce:
    Pour the maple balsamic mixture evenly over the chicken.

  4. Cook:
    Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the chicken is tender and fully cooked.

  5. Thicken the glaze (optional):
    Remove the chicken and set aside. Pour the cooking liquid into a small saucepan and simmer for 5–7 minutes until slightly thickened. Return the chicken to the sauce or drizzle over when serving.

  6. Serve:
    Spoon the glaze over the chicken and garnish with fresh herbs.
