🔥🥓 Smoked Pork Belly Burnt Ends

Ingredients:

  • 4–5 lbs pork belly, skin removed, cut into 1 ½-inch cubes

  • ¼ cup yellow mustard (binder)

  • ½ cup BBQ dry rub (your favorite pork rub)

  • 1 cup BBQ sauce

  • ½ cup honey

  • ½ cup brown sugar

  • 4 tbsp unsalted butter, sliced


Instructions:

  1. Prep pork belly: Pat pork belly dry. Toss cubes with mustard, then coat generously with BBQ rub.

  2. Smoke (Phase 1): Place cubes on a wire rack or directly on the smoker grates. Smoke at 250°F (120°C) for 2 ½–3 hours until a dark bark forms.

  3. Wrap & braise (Phase 2): Transfer pork belly cubes to a disposable aluminum pan. Add butter, honey, and brown sugar. Cover tightly with foil and return to smoker for 1 ½–2 hours, until tender and jiggly.

  4. Sauce & finish (Phase 3): Drain excess liquid from the pan. Toss pork belly with BBQ sauce. Return to smoker uncovered for 20–30 minutes to caramelize and set the glaze.

  5. Serve: Remove from smoker, let rest 10 minutes, and enjoy those juicy, sticky bites!
