Tzatziki Chicken Salad
Ingredients:

2 cups cooked chicken, shredded or diced

1 cup plain Greek yogurt

1/2 cucumber, finely diced (peeled and seeded if you prefer)

1 tablespoon fresh dill, chopped

1 tablespoon fresh lemon juice

1 small garlic clove, minced

1 tablespoon extra-virgin olive oil

1/4 teaspoon salt
-
1/4 teaspoon black pepper

1/4 cup red onion, finely diced (optional)

Cherry tomatoes and fresh lettuce for serving (optional)
Instructions:

In a bowl, stir together Greek yogurt, cucumber, dill, lemon juice, garlic, olive oil, salt, and pepper until smooth and creamy.

Fold in the cooked chicken and red onion if using.

Chill at least 20 minutes so the flavors get friendly.

Serve in lettuce cups, in pita bread, on a sandwich, or with crackers and tomatoes on the side.
